It’s that time of year, Zucchini Season
Well, it’s that time of year when everyone’s home garden has a bumper crop of zucchini, and even if you do not have a garden, you have a friend, loved one, co-worker, or neighbor who has come to you with an arm full of this great green squash.
Do not despair. Recipes to the rescue! Zucchinis are full of fiber, vitamins, and minerals, so please don’t leave them to perish in the back of your refrigerator. Give zucchini a chance!!
Short on time? No worries, (no excuses) slice them into lengths or rounds, coat them with olive oil, garlic, and thyme and saute in a pan or toss them onto your grill or into an air fryer.
